Deconstructed White fish tacos with guacamole

Flaky white fish is great for fish tacos, even if you don’t wrap them in a tortilla! This recipe uses many of the staple ingredients we have kicking around in our fridge to make a quick marinade for this tropical dish. While we wait, I show you how to whip up an awesome guacamole. This recipe is straightforward, light and bursting with flavor. Eat it with or without a taco shell, but make sure to enjoy!

Fish

  • 2 thin filets of white fish (tilapia, halibut, flounder, etc)
  • Approx 3 tablespoons of olive ol
  • Juice of 1 lime (or 2 second long squirts of lime juice)
  • 1tbs of cilantro
  • 10 shakes of chili powder
  • 2 shakes of garlic powder
  • 3 shakes of onion powder
  • 2 pinches of kosher salt
  • 2 pinches of black pepper

Guacamole

  • 1 avocado, diced
  • 1 normal size tomato or 2 small tomatoes, diced
  • 1 small onion, diced
  • 1 clove garlic, pressed
  • Juice of 1 lime
  • 1tbs of cilantro
  • 2 pinches of kosher salt
  • 2 pinches of black pepper
  • 1 tbs olive oil


Directions

Prepare marinade for fish

Set the fish aside and whisk together all other ingredients together in a shallow bowl to form the marinade

3 tbs olive oil
juice of 1 lime
10 shakes of chili powder
2 shakes of garlic powder
3 shakes of onion powder
2 pinches of kosher salt
2 pinches of black pepper
marinating fish

Allow fish to marinate for at least 20 minutes

Place the fish in the bowl and let sit for at least 20 minutes

Make Guacamole

Mix all the ingredients in a bowl :)

1 diced Avocado
1 tomato
1 small onion, diced
1 clove garlic
juice of 1 lime
1 tbs cilantro
2 pinches of salt
2 pinches of pepper
1 tbs olive oil (optional)
Guacamole finished

Impress your friends with this easy, fresh guac. This is a great side for many dishes, or a fantastic snack for an impromptu dinner party!

Cook the fish

Over medium high heat, place the fish on the grill or grill pan. Cook until the bottom side is flakey and a little browned. You’ll want to quickly and assertively shove a spatula underneath so the bottom doesn’t stick to the cooking surface. Flip over the fish and cook until other side is also flakey and brown.

Careful you don’t mangle it when you flip!

Plate fish, scoop guac, and garnish with fresh cilantro if you’ve got it. Keep fish whole, or break up with a fork for a more “taco-like” texture. I recommend mixing the two together to for full flavor.

Notes

Obviously this would be great in a tortilla as a real taco if you’ve got them. Douse it with Cholula for a peppery kick, or add your favorite taco toppings. Enjoy!

Substitutions

  • This should be pretty good with just about any white fish. Examples are mahi mahi, orata, tilapia, halibut, flounder, cod, etc. Experiment and let me know what you like best!
  • If desired, fresh onion and garlic can be substituted for the powders in the marinade. For best results, put 1/2 small to medium sized onion and 1 clove of garlic in the food processor and add to marinade.
  • On the same token, garlic powder and onion powder can be used for the guacamole in a pinch. I would use about 5 shakes of onion powder and 2 shakes of garlic powder for this.
