  • 1/2 medium to small sliced onion

Zucchini and Eggs Sandwich

This recipe was a summer staple growing up in my house, and is a reaaalll treat. The flavors in this colorful sandwich are light, fresh and oh so tasty. The following recipe makes about 6 heaping sandwiches, but feel free to cut it down for a smaller snack. This is, however, good as left overs for about 3 days.

Ingredients

  • 1lb Zucchini
  • 1 Onion
  • 1 clove Garlic
  • 6 Eggs
  • 1 palm full of grated Romano or Parmesan Cheese
  • 1/2 package of Good Seasons recipe mix
  • Olive oil
  • 1/2 jar of Roasted red peppers (1-2 peppers)
  • 5-7 shakes of Pepper
  • Whole wheat rolls or sandwich slices

Stuffed Chicken with Thyme Infused Ricotta and Spinach

Who doesn’t love ricotta and spinach? Add roasted red peppers, onions and garlic, and you have one hell of a stuffing. In this recipe we stuff some paper thin chicken breasts with this delectable mixture, and do it all in less than an hour. Let’s get chopping!

  • 2 chicken cutlets or tenderized chicken breasts
  • 3 tbsp scoops of ricotta
  • 1/2 finely chopped onion
  • 1.5 – 2 roasted red peppers

Deconstructed White fish tacos with guacamole

Flaky white fish is great for fish tacos, even if you don’t wrap them in a tortilla! This recipe uses many of the staple ingredients we have kicking around in our fridge to make a quick marinade for this tropical dish. While we wait, I show you how to whip up an awesome guacamole. This recipe is straightforward, light and bursting with flavor. Eat it with or without a taco shell, but make sure to enjoy!

Fish

  • 2 thin filets of white fish (tilapia, halibut, flounder, etc)
  • Approx 3 tablespoons of olive ol
  • Juice of 1 lime (or 2 second long squirts of lime juice)
  • 1tbs of cilantro
  • 10 shakes of chili powder
  • 2 shakes of garlic powder
  • 3 shakes of onion powder
  • 2 pinches of kosher salt
  • 2 pinches of black pepper

Guacamole

  • 1 avocado, diced
  • 1 normal size tomato or 2 small tomatoes, diced
  • 1 small onion, diced
  • 1 clove garlic, pressed
  • Juice of 1 lime
  • 1tbs of cilantro
  • 2 pinches of kosher salt
  • 2 pinches of black pepper
  • 1 tbs olive oil

Chicken with Dijon garlic lemon marinade and caramelized onion and mushroom wild rice

This dish takes about an hour to fully prepare, but it’s worth it, and you kill two birds with one stone by marinating the chicken while waiting for the rice. The chicken is light and flavorful, and the wild rice is hearty and delicious. Great to make early in the week so you have rice left over for later!
